1. Place oven rack 4 to 5 inches from broiler; preheat broiler to low. Line rimmed baking pan with foil; place Arctic char, skin side down, on prepared pan. Brush Arctic char with 1 tablespoon oil; sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Lay 2 orange slices on top of each Arctic char fillet, overlapping if necessary; broil for 8 minutes or until internal temperature reaches 145°
2. In a large bowl, whisk orange juice, lemon juice, honey, remaining 1 tablespoon oil, and 1/4 teaspoon each salt and pepper. Add fennel, arugula, raisins, cheese, and almonds; gently toss. Makes about 4 cups.
3. Serve Arctic char with fennel salad.
